Beef - Meat of a cow, heifer, bull, calf or ox. The only difference is that the meat of young animals, calves or heifers (not sexually mature cattle) is often called "veal".
Top grade
Clean meat with a small amount of connective tissue (3-4%). This variety includes the rump, rump, sirloin and breast part, sirloin and dorsal part.
First grade
Meat in which the content of connective tissues is 4-5%. The first grade includes the neck, flank, shoulder and shoulder portions.
Second grade
Meat with 10-23% connective tissue. This class includes the cut, front and back shank.
